This is a keeping-quality step, not a yield step: residual buttermilk sours within days and turns good butter rancid at the edges. Washed butter keeps two to three weeks in the fridge instead of four or five days.
4. Over-working the finished butter
Here is where washing turns into a yield problem. Pressing out every last drop drives the water content below the 16% that butter is supposed to hold, and on a gallon batch that can mean four to six ounces of lost weight and a crumbly, waxy texture. Work it just until no more cloudy liquid appears, then stop.
