How It Works

Cheese Yield Percentages

Cheese yield is the percentage of milk weight that ends up as finished cheese. Fresh cheeses like chèvre have the highest yields because they retain more moisture. Hard aged cheeses like cheddar have lower yields due to pressing and aging losses.
