Biological Efficiency (BE) is the standard metric in mushroom cultivation, calculated as the ratio of fresh mushroom weight to dry substrate weight, expressed as a percentage. For example, a 100% BE means 1 pound of dry substrate produces 1 pound of fresh mushrooms. Different species naturally have different BE potentials — oyster mushrooms can achieve 100–150% BE, while shiitake on logs typically ranges from 30–50%.
